Despite the great diversity among restaurants around the world, the basic experience remains almost always the same: dining in one place, with a menu set by a single chef. Even if the menu changes, it remains loyal to a certain style. This is where We Are Ona, the creative culinary studio led by Luca Bronzato, stands out, offering an alternative model that impresses.
We Are Ona: An Exceptional Show
During the “We Are Ona x Brutalisten” event in Paris last October, coinciding with Art Basel Paris 2024, chefs Quinn Deleman and Stefan Eriksson presented a tasting menu photographed by Pierre Björk, which included distinctive dishes such as “Flower Buttons,” “The Milking Cow,” and others like “Floating Chicken.”

Creating a Community for Creative Cooking
Bronzato says, “The idea was to create a creative cooking studio that brings together fine culinary talents, such as chefs, bartenders, and waiters, alongside designers and artists from various fields. The goal is to provide an opportunity for everyone to express themselves through the art of food.”
Since 2019, the We Are Ona team has launched pop-up restaurants around the world, from the Turkish coasts to Manhattan skyscrapers. At each event, the team collaborates with a new chef, a different group of creative directors, local suppliers, and new guests.

Experiences in Unconventional Locations
We Are Ona’s event locations stand out for being unconventional, such as an old stable in Arles or a tennis club in Milan. The goal is to infuse new life into familiar places for guests, who are usually writers, designers, and artists.

Culinary Challenges and Unprecedented Experiences
2024 was filled with challenges. During Art Basel Paris, We Are Ona collaborated with the Brutalisten restaurant to offer a unique dining experience using strict classifications for food preparation. The menu included dishes based on just one or two ingredients, aiming to highlight natural flavors in innovative ways.
Cooking as a Human Art
Bronzato believes cooking is a form of art that evokes emotions, where chefs, designers, and guests are all part of an integrated creative experience. The aim is to create lasting memories that transcend food and décor.

Towards a New Future for Fine Dining
With the changes occurring in the fine dining industry, We Are Ona presents an innovative model that focuses on human and sustainable experiences. Bronzato says, “In a digital world, we believe at We Are Ona in human moments that bring people together around shared tables and unforgettable dining experiences. This is fine dining for me: a human moment that will always stay in memory.”
